Mr Tom Cupcakes.

You might remember in my Nice Vegan Things round up (a few blogs down!) that I have a love for Mr Tom bars. They are seriously good- they're from Germany and you can find them in random places like some petrol stations and corner shops. They have funky packaging and taste delish. Peanuty chewy goodness. A few weeks ago I also invented peanut butter icing.
And so today I decided to combine the two inventions to make MR TOM CUPCAKES!!

I made a basic cupcakes recipe, using bananas (my new favourite egg replacement) and some oil, iced them with peanut butter icing, then topped it off with a chunk of Mr Tom. I bought a new piping bag set this week so had to try them out.

* PEANUT BUTTER ICING DOES NOT WORK IN A PIPING BAG*

The chunks of peanut clogged it up. Lovely. Though I actually prefer the 'rustic' icing anyway. Yum!

I ♥ Chickpeas.

Spiced Chickpea and Lemon Soup.
This recipe is inspired from a lovely little cookbook from Rose Bakery. The book is called 'Breakfast, Lunch, Tea', by Rose Carrarini, the co- founder of a cute deli in London, and restaurant in Paris. The cookbook offers a variety of recipes, mostly non-vegan and non-veggie but easily veganized, plus they even have a couple of vegan recipes!
3 cans of chickpeas (yes, I'm lazy!)
2 onions
1 carrot
2 stock cubes (2 pints of stock, roughly)
2 garlic cloves
salt
pepper
1 tablespoon ground cumin
1 teaspoon (ish...!) chilli powder
1 squeezed lemon
Garnish: sesame seeds and cumin seeds.

Heat oil in a deep saucepan, then cook onion and carrot until just tender.
Add garlic, salt, pepper, ground cumin and chilli powder.
Stir for a few minutes, then add chickpeas and stock until the vegetables are covered by about 3 cms.
Simmer for 30 minutes, take off the heat to cool a little, then liquidise until smooth. If it's a little thick add more stock, or maybe some oat milk, but it should be fine.
Add the lemon juice and garnish with seeds. Serve with warm crusty bread and a glass of wine.

Aniseed Toasts.


Kind of like a cookie. With aniseed in. They were too tempting to pass up when I saw them in the crazy food section in Tesco's.
Verdict: Thumbs Up!
Other people's verdict: Meh.

The Co-operative: Good for vegans!


I literally get so over excited at the sight of a Co-op, and I believe I have good reason to!
These are the goodies I picked up at the weekend (possibly the only good thing about Worthing?).
No your eyes are not deceiving you; that is a pack of jam doughnuts (actually I bought two packets, but shh...) a packet of JAM FILLED ICE BUNS (have these existed for a while and I have just never tried them? Oh my!!) AND a bag of American Hard Gums, which I totally spent my childhood eating, yumyumyum!

Rootmaster, Brick Lane.

I've only managed to visit this amazing bustaurant a couple of times, but it is a firm favourite. Discreetly 100% vegan, this place serves seriously delicious food, verging on gourmet!
Great atmosphere, great food, and a great price. And you're on a BUS!!

From Liverpool Street Station walk towards Brick Lane. At the corner by the All Saints store turn right, and the next left, as if you're walking toward Rough Trade. The bus is parked down this lane, you can't miss it!

Satay Skewers. Cubes of perfectly cooked tofu, smothered in peanutty goodness, on a bed of lettuce, scattered with sesame seeds. Yum!
